• 2 cups water
  • 1 cup quinoa
  • 1 Tb. olive oil
  • 1/2 yellow onion, diced
  • bell pepper, diced
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup feta
  • salt and pepper
  • cilantro



1. Place water and quinoa in saucepan and cover. Bring to boil, then reduce to simmer and cook until all water is absorbed, approximately 20 minutes. Fluff with fork and allow to cool.

2. Heat another pan over medium heat and add olive oil. Sautee onion and bell pepper until soft. Allow to cool.

3. In a bowl, combine quinoa, onion, bell pepper, dried cranberries, pumpkin seeds, and feta. Add salt and pepper to taste and garnish with cilantro.
